Dry Aged Tenderloin w/Balsamic Shimeji Mashroom

USDA Choice premium tenderloin, white shimeji mashroom, organic Gala apple, cucumber, tomato.
--- Balsamic steak sauce ---
3/4 cup organic balsamic vinegar, 2/3 cup ketchup, 1/4 honey, 2 sliced shallots,
2 tbsp Worcostershire sauce, 1 tbsp Dijon mustard, 1/4 tsp all spice, sugar, salt & pepper.
